Calamares en salsa de tomate y vino tinto (Squids in tomato sauce and red wine)
Use your spaghetti sauce or favorite. This dish can be served as a side dish, appetizer or over pasta. A recipe of Italian origin.
ingredients:
1 kilo squid, cleaned
4 cups tomato sauce for pasta
1 cup of red wine Chianti
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 tablespoons minced garlic
1 teaspoon ground black pepper
Half cuchatadita chili powder
1 teaspoon dried basil
1/3 cup grated Romano cheese

Separate the tentacles of the squid body. Slice the squid tubes into pieces of 1.5 cm, reservation.
In a saucepan, combine the tomato sauce, red wine, lemon juice, olive oil, garlic, pepper, chili powder, basil and cheese. Cook over medium-low for 30 minutes for the alcohol in wine evaporates and the flavors to blend.
Add the squid to the sauce. Continue cooking over low heat for 20-30 minutes, stirring occasionally. The squid will be ready when they have grown fat and look more opaque. No heat cook them for higher or longer time period as the squid is reputed to be chewy.
